When life gives you lemons, skip the lemonade and go straight to Lemon Meringue Pie! This classic dessert made from a flaky crust filled with tart lemon curd and topped with toasted meringue is the perfect balance of sweet and sour. While it may seem like this pie is a Southern confection, the recipe actually can be traced back to an area of the country a little further north. Mrs. Elizabeth Goodfellow, a Victorian Era pastry shop proprietress from Philidelphia, PA is credited with coming up with the pie idea based on her lemon pudding recipe. Her lemon custard recipe called for 10 egg yolks, and rather than let the whites go to waste, she likely whipped up the meringue to place on top. National Lemon Meringue Pie Day is celebrate every August.
