America’s favorite sweet onions come into season each year at about this time and are available fresh in the market through Labor Day. These hand-planted, hand-harvested sweeties are low in pyruvate, the chemical that makes onions hot and causes cooks to tear up when cutting. Vidalia onions grow only in a 20-county area in southeast Georgia. In fact, the Georgia Department of Agriculture has registered the name Vidalia as it pertains to onions. The temperate climate and unique soil ensure the onions will have a mild and sweet taste.
