Pastrami is a seasoned, brined and partially dried meat typically made from beef near the navel, making it fatty and flavorful. It is believed to be of Romanian origins and likely came to North America with the waves of Jewish immigrants from Eastern Europe. Early references to the meat are spelled "pastrama," but "pastrami" probably came about to be similar to a similar cured meat, salami. Pastrami is used in similar sandwiches as corned beef but the two meats are not one in the same. Corned beef tends to be a brisket cut. And while pastrami is typically smoked, corned beef is boiled or steamed.
